The wines covered by the Protected Denominación de Origen Calatayud must comply with the requisites established in the Specifications and Regulations that regulate the production process. These Specifications and Regulations cover all the stages of production and guarantee the product’s origin and its traceability.
Before each wine is certified, both the premises of the producer and their production process is evaluated to ensure they meet the established standards. There is also a physiochemical and organoleptic analysis of the samples taken for this purpose during this evaluation.
At this present moment in time the Tasting Panel is in the accreditation stage of the ISO/IEC/17025 standard for the application of the organoleptic analysis of the samples collated by the auditors of the certifying body, during the certification audits, in order to verify the suitability of the samples to the requisites as stipulated in the Specifications and Regulations.
The wineries that have been certified in this way are able to commercialize their wines with the label of D.O.P. Calatayud, while, their failure to meet these standards could result in their certificate not being granted or it being revoked and they would then be denied the use of the brand, stopping them from selling their wine under the name of this Denominación de Origen.
ENAC evaluates each and every one of the relative aspects in the fulfilment of the standard UNE-EN ISO/IEC 17065, the standard which dictates the function of the Regulatory Board in control of the wineries.
All the controls are carried out by the Regulatory Board of the Denominación de Origen Protegida Calatayud in accordance with the standard ISO 17065, this board being accredited by Spanish National Accreditation Entity (ENAC). With the reference number 98/C-PR238 for the certification of the products as defined in Specifications and Regulations.
This accreditation signifies an acknowledgement of the rigor in which the control is conducted giving the consumer a guarantee of authenticity and quality of the wines elaborated by the wineries, and give confidence in the capacity of the certifying body, in its independence and in its impartiality.

- Chapter 8 of the Quality Manual “ Complaints and Appeals”
- Directory of certified products, which contains at the very least the product’s identification, rules and other regulatory documents and the client list.
For the inscription of new operators the “ Inscription and Certification Application form” must be requested.
